When I, Dr. Paul Kwik, married my wife, I was introduced to Kim-chi.   Kim-chi is definitely an acquired taste, but, over time, I noticed she never got sick.   I didn't know why, at first, but research has shown that fermented vegetables are great for the immune system.  Kim-chi is from Korea, but other cultures do fermented/cultured vegetables too:  Germany, being one of them, produces Sauekraut.   Please let us know if you have any great recipes or tell us about your experience with fermented vegetables on our facebook page.  See below for how to make it yourself.
